  • onion, diced (1 medium)
  • garlic, minced (2 cloves)
  • ginger, grated (1-inch piece)
  • vegetable oil (2 tbsp)
  • salt and pepper, to taste
  • fresh cilantro, for garnish

To start, cook the penne pasta according to the package instructions in a large pot of salted water until al dente. Drain and set aside.

In a skillet, heat vegetable oil over medium heat. Add the diced onion, minced garlic, and grated ginger. Sauté until fragrant and the onions are translucent.

Next, add the sliced bell peppers to the skillet and cook until they begin to soften. Stir in the red curry paste and cook for another minute to release its flavors.

Pour in the coconut milk and pineapple chunks, stirring well to combine. Let the mixture simmer for a few minutes to allow the flavors to meld together.

Add the cooked penne pasta to the skillet, tossing everything together until the pasta is coated in the creamy curry sauce. Season with salt and pepper to taste.
