Ingredients

  • jumbo shrimp, peeled and deveined
  • dragon fruit, diced
  • kiwis, diced
  • avocado, diced
  • cashews, toasted
  • red onion, thinly sliced
  • Thai chilies, minced
  • fresh cilantro, chopped
  • fresh mint, chopped
  • lime juice
  • fish sauce
  • honey

Kitchen Tools

  • knife
  • cutting board
  • skillet
  • mixing bowl
  • serving platter

Preparation

Start by heating a skillet over medium heat. Add the jumbo shrimp and cook until they are pink and opaque, about 3-4 minutes per side. Remove from the heat and set aside.

In a large mixing bowl, combine the diced dragon fruit, kiwis, avocado, toasted cashews, red onion, Thai chilies, cilantro, and mint. Toss gently to mix.

In a small bowl, whisk together the lime juice, fish sauce, and honey to create the dressing. Pour the dressing over the fruit and nut mixture and toss to coat evenly.

Place the cooked shrimp on top of the fruit salad and drizzle any remaining dressing over the shrimp.

Transfer the salad to a serving platter and garnish with additional cilantro and mint leaves.

Serve immediately and enjoy the vibrant flavors of this unique Thai-inspired dish.
