Autumn Comfort Food: Pumpkin Sage Macaroni and Cheese

Today, I’m excited to share one of my favorite comforting dishes for the autumn season: Pumpkin Sage Macaroni and Cheese. This creamy and flavorful twist on a classic mac and cheese is perfect for cozy nights in or as a side dish for a fall gathering.

Ingredients:

  • elbow macaroni (250g)
  • pumpkin puree (200g)
  • milk (300ml)
  • butter (50g)
  • flour (30g)
  • cheddar cheese (150g)
  • sage leaves (10)
  • salt and pepper to taste

Kitchen Tools:

  • saucepan
  • whisk
  • baking dish

Start by cooking the elbow macaroni according to the package instructions until al dente. Drain and set aside. In a saucepan, melt the butter over medium heat. Add the flour and whisk constantly until a roux forms. Slowly pour in the milk while whisking to create a smooth sauce.

Stir in the pumpkin puree and chopped sage leaves, allowing the mixture to simmer and thicken. Season with salt and pepper to taste. Gradually add the cheddar cheese, stirring until melted and well combined.

Preheat your oven to 350°F (180°C). Combine the cooked macaroni with the pumpkin cheese sauce, then transfer it to a baking dish. Bake for 20-25 minutes, or until the top is golden and bubbly.

Tip:

For an extra flavor boost, try adding a pinch of nutmeg or a sprinkle of crispy bacon crumbs on top before baking.

Once ready, serve this Pumpkin Sage Macaroni and Cheese hot, garnished with additional sage leaves for a festive touch. This dish weighs approximately 850g in total, yields 6 servings, with an average serving weight of 140g. Each serving is estimated to be around 350 calories.
