As the weather starts to cool down and the leaves change colors, I find myself craving warm and cozy desserts. Today, I’m excited to share with you a unique recipe for a Caramelized Pear and Gorgonzola Galette. This dessert combines the sweetness of caramelized pears with the savory tang of Gorgonzola cheese, all wrapped up in a flaky pastry crust. It’s the perfect balance of flavors for a fall treat.

Ingredients:

  • puff pastry dough (homemade or store-bought), 250g
  • pears, sliced, 3 medium
  • Gorgonzola cheese, crumbled, 100g
  • brown sugar, 50g
  • butter, 50g
  • cornstarch, 10g
  • egg, beaten, for egg wash

Kitchen Tools:

  • baking sheet
  • knife
  • pastry brush

To start, preheat your oven to 375°F (190°C). Roll out the puff pastry dough on a lightly floured surface to form a circle. Transfer the dough to a baking sheet lined with parchment paper.

In a saucepan, melt the butter over medium heat. Add the sliced pears and brown sugar, stirring gently until the pears are caramelized and softened, about 5-7 minutes. Mix in the cornstarch to thicken the juices. Remove from heat and let it cool slightly.

Arrange the caramelized pears in the center of the puff pastry circle, leaving a border around the edges. Sprinkle the crumbled Gorgonzola cheese over the pears. Fold the edges of the pastry over the filling, pleating as needed.

Brush the edges of the galette with the beaten egg wash for a golden finish. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and crisp.

Once baked, let the galette cool slightly before slicing. Serve warm and enjoy the delightful combination of sweet caramelized pears and creamy Gorgonzola cheese in every bite.

The cooked galette weighs approximately 500g and serves 6. Each serving is around 83g with an estimated calorie count of 280 per serving.

One clever tip for this recipe is to sprinkle a little extra brown sugar on top of the galette before baking for an extra sweet and caramelized finish.
