Decadent Caramelized Pineapple Empanadas

Today, I’m excited to share a unique dessert recipe that combines the sweetness of caramelized pineapple with a crispy empanada shell. This dish is perfect for any occasion when you want to impress your guests with a creative and delicious treat.

Ingredients:

  • 300g diced pineapple
  • 100g brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 50g butter
  • 6 frozen empanada shells

Kitchen Tools:

  • saucepan
  • wooden spoon
  • baking sheet
  • pastry brush

Start by melting the butter in a saucepan over medium heat. Add the diced pineapple and brown sugar, stirring until the sugar has dissolved. Sprinkle in the cinnamon and salt, continuing to cook until the pineapple is caramelized and golden brown, about 15-20 minutes.

While the pineapple mixture is cooking, preheat the oven according to the instructions on the empanada shell package. Once the pineapple is caramelized, remove it from the heat and set it aside to cool slightly.

Place the frozen empanada shells on a baking sheet lined with parchment paper. Spoon a generous amount of the caramelized pineapple mixture onto one half of each empanada shell. Fold the other half over the filling and use a fork to crimp the edges closed.

Using a pastry brush, lightly brush the tops of the empanadas with any remaining butter from the saucepan to help them brown in the oven. Bake according to the package instructions for the empanada shells, until they are golden brown and crispy.

Once the empanadas are finished baking, remove them from the oven and let them cool for a few minutes before serving. These caramelized pineapple empanadas are best enjoyed warm, with a scoop of vanilla ice cream or a dollop of whipped cream on the side.
