Roasted Butternut Squash and Brussels Sprouts with Balsamic Glaze

Hello there, foodies! Today, I am thrilled to share one of my favorite fall recipes with you. The combination of sweet butternut squash, earthy Brussels sprouts, and tangy balsamic glaze creates a dish that’s bursting with flavor and perfect for those cozy autumn evenings at home.

To start this recipe, you will need the following ingredients:

  • 1 small butternut squash, peeled and diced
  • 1 pound Brussels sprouts, trimmed and halved
  • 2 tablespoons olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste

Don’t forget to grab these essential kitchen tools before getting started:

  • baking sheet
  • mixing bowl
  • whisk
  • oven

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. In a large mixing bowl, combine the diced butternut squash and halved Brussels sprouts. Drizzle olive oil over the vegetables, season with salt and pepper, and toss everything together until well coated.

Spread the vegetables out in a single layer on the prepared baking sheet. Roast in the oven for 25-30 minutes, or until the butternut squash is tender and the Brussels sprouts are slightly crispy on the edges.

In a small saucepan, whisk together balsamic vinegar and honey over medium heat. Bring the mixture to a simmer and cook for 5-7 minutes, or until it has reduced by half and is thick and syrupy.

Once the vegetables are done roasting, drizzle the balsamic glaze over the top and gently toss to combine. Transfer the roasted butternut squash and Brussels sprouts to a serving dish and serve hot.

This delightful dish weighs approximately 1200 grams once cooked and serves 4 people. Each serving is around 300 grams with an estimated calorie count of 250 per serving.
