Introducing: Fall-Inspired Stuffed Acorn Squash

Today, I’m excited to share with you a cozy and comforting Fall recipe that never fails to bring warmth and joy to my kitchen. This stuffed acorn squash dish is not only visually stunning but also incredibly delicious, making it the perfect addition to any autumn table. The combination of savory and sweet flavors in this recipe creates a delightful harmony that will have your taste buds singing with delight.

For this recipe, you will need the following ingredients:

  • medium acorn squash
  • ground turkey
  • onion
  • garlic
  • cooked quinoa
  • dried cranberries
  • walnuts
  • dried thyme
  • cinnamon
  • salt and pepper

To prepare this dish, you will need the following kitchen tools:

  • knife
  • cutting board
  • spoon
  • baking sheet
  • skillet

Start by preheating your oven to 375°F (190°C). Cut the acorn squash in half lengthwise and scoop out the seeds. Place the squash halves cut side down on a baking sheet and roast in the oven for about 30 minutes, or until they are tender.

While the squash is roasting, heat a skillet over medium heat and cook the ground turkey until browned. Add the diced onion and minced garlic, cooking until the onion is translucent. Stir in the cooked quinoa, dried cranberries, chopped walnuts, dried thyme, cinnamon, salt, and pepper. Cook the mixture for a few more minutes until everything is heated through and well combined.

Once the acorn squash halves are tender, remove them from the oven and carefully flip them over. Fill each squash half with the turkey and quinoa mixture, packing it in tightly. Return the stuffed squash to the oven and bake for an additional 10-15 minutes, allowing the flavors to meld together.

Once the stuffed acorn squash is cooked through and golden brown on top, remove them from the oven and let them cool slightly before serving. This dish is best enjoyed warm, allowing the flavors to fully develop.

This recipe yields approximately 4 servings, with each serving weighing around 400g. Each serving is approximately 350 calories.

A clever tip for this recipe is to sprinkle a bit of grated Parmesan cheese on top of the stuffed squash before baking for an added layer of flavor and a beautiful golden crust.

I encourage you to give this Fall-inspired stuffed acorn squash recipe a try and make it your own by adding your favorite ingredients or spices. It’s a versatile dish that can easily be customized to suit your preferences. Enjoy!
