Fall Treats: Pumpkin Spice Cheesecake Bars

Today, I’m excited to share a delicious recipe that perfectly captures the cozy flavors of fall: Pumpkin Spice Cheesecake Bars. As the temperatures drop and the leaves change colors, there’s nothing better than indulging in a warm, spiced treat to enjoy with loved ones or savor as a solo indulgence.

Ingredients:

  • 300g cream cheese, softened
  • 150g sugar
  • 1 egg
  • 200g pumpkin puree
  • 2 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 200g graham cracker crumbs
  • 100g butter, melted
  • for topping

Kitchen Tools:

  • mixing bowl
  • whisk
  • square baking pan
  • oven

To start, preheat your oven to 350°F (180°C) and line a square baking pan with parchment paper. In a mixing bowl, combine the graham cracker crumbs with melted butter and press the mixture into the bottom of the prepared pan to form a crust. Bake for 10 minutes until lightly golden and set aside to cool.

In another mixing bowl, beat the cream cheese and sugar together until smooth. Add in the egg, pumpkin puree, pumpkin pie spice, and vanilla extract, mixing until well combined. Pour the pumpkin cheesecake mixture over the graham cracker crust, spreading it out evenly.

Bake the cheesecake bars in the preheated oven for 25-30 minutes, or until the edges are set but the center is slightly jiggly. Allow the bars to cool completely before chilling in the refrigerator for at least 2 hours.

Once chilled, slice the pumpkin spice cheesecake bars into squares and serve with a dollop of whipped cream on top. These bars are perfect for a cozy fall day, whether enjoyed with a hot cup of coffee or as a sweet ending to a seasonal meal.

Total weight of cooked dish: 850g
Number of servings: 9
Average weight of one serving: 94g
Approximate calorie count per serving: 250 calories

One clever tip for this recipe is to sprinkle a bit of extra pumpkin pie spice on top of the whipped cream for a festive finishing touch. It adds a pop of flavor and a hint of warmth to each bite.

I hope you give these Pumpkin Spice Cheesecake Bars a try and enjoy them as much as I do. Feel free to get creative with the toppings or adjust the spices to suit your preferences. Happy baking!
