The combination of floral notes from lavender, the sweetness of honey, and the nuttiness of pistachios creates a harmonious symphony of flavors that is sure to impress your taste buds.

Ingredients:

  • 300ml heavy cream
  • 200ml whole milk
  • 150g sugar
  • 2 tbsp dried lavender
  • 100g honey
  • 100g chopped pistachios

Kitchen Tools:

  • saucepan
  • mixing bowl
  • whisk
  • fine mesh strainer
  • ice cream maker

To start, in a saucepan, heat the heavy cream and whole milk over medium heat until it begins to simmer. Add in the sugar and dried lavender, stirring until the sugar has dissolved. Remove the mixture from heat, cover the saucepan, and let it steep for 30 minutes to infuse the lavender flavor.

After the mixture has steeped, strain it through a fine mesh strainer into a mixing bowl to remove the lavender buds. Stir in the honey until fully incorporated. Cover the bowl with plastic wrap and refrigerate the mixture for at least 4 hours or overnight to chill.

Once chilled, pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions. During the last few minutes of churning, add in the chopped pistachios to evenly distribute them throughout the ice cream.

Transfer the churned ice cream into a container and freeze for an additional 2-3 hours to set. When ready to serve, scoop out the lavender honey pistachio ice cream into bowls or cones and enjoy the creamy, fragrant goodness.
