Summer Berry Salad with Basil-Lime Vinaigrette

Today, I’m excited to share this refreshing Summer Berry Salad with Basil-Lime Vinaigrette. As the weather heats up, there’s nothing quite like the burst of juicy berries combined with the zesty kick of basil and lime. This dish is perfect for a light lunch or as a side for a summer BBQ.

Ingredients:

  • 400g mixed berries (strawberries, blueberries, raspberries)
  • 150g baby spinach
  • 100g feta cheese, crumbled
  • 1/4 cup fresh basil leaves
  • 1 lime, juiced and zested
  • 3 tbsp extra virgin olive oil
  • 1 tbsp honey
  • Salt and pepper, to taste

Start by preparing the basil-lime vinaigrette. In a small bowl, whisk together the lime juice, lime zest, extra virgin olive oil, honey, salt, and pepper until well combined. Set aside to let the flavors mingle.
