Ingredients:

  • fresh pasta dough (300g)
  • ricotta cheese (200g)
  • butternut squash, roasted and mashed (250g)
  • fresh sage leaves (10g)
  • butter (50g)
  • parmesan cheese, grated (50g)
  • nutmeg, freshly grated
  • salt and pepper to taste

To begin, roll out the fresh pasta dough thinly and cut it into squares. In a mixing bowl, combine the ricotta cheese with the roasted and mashed butternut squash, adding a pinch of freshly grated nutmeg for a warm and aromatic flavor. Season the mixture with salt and pepper to taste.

Place a spoonful of the cheese and squash filling in the center of each pasta square, then fold the dough over to form a triangle, pressing the edges firmly to seal the ravioli. In a pot of boiling water, cook the ravioli until they float to the surface, indicating that they are ready.

While the ravioli are cooking, melt the butter in a pan and add the fresh sage leaves, letting them cook until crispy. Once the ravioli are cooked, remove them from the water and toss them in the sage-infused butter, coating each piece evenly.
