  • 2 apples, peeled and diced (250g)
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 red chili, sliced
  • 1 liter vegetable broth
  • 1 can coconut milk (400ml)
  • 2 tbsp curry powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 2 tbsp olive oil

To start, heat olive oil in a large pot over medium heat. Add the chopped onion, garlic, ginger, and sliced chili and sauté until fragrant. Then, add the diced pumpkin and apples to the pot and cook for a few minutes until they start to soften.

Next, pour in the vegetable broth and coconut milk, then add the curry powder, cumin, salt, and pepper. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the pumpkin and apples are tender.

Once the vegetables are soft, use an immersion blender to puree the soup until smooth and creamy. Adjust the seasoning with more salt and pepper if needed.

Serve the Spicy Pumpkin and Apple Soup hot, garnished with a swirl of coconut milk and a sprinkle of chili flakes for an extra kick.
