  • butternut squash, 500g (diced)
  • maple syrup, 2 tbsp
  • balsamic vinegar, 1 tbsp
  • olive oil, 3 tbsp
  • mixed greens, 200g
  • dried cranberries, 50g
  • feta cheese, 100g
  • roasted pepitas, 50g
  • salt and pepper, to taste

  • sharp knife

To start, preheat your oven to 400°F (200°C). In a mixing bowl, combine the diced butternut squash, maple syrup, balsamic vinegar, olive oil, salt, and pepper. Toss everything together until the squash is well coated. Spread the mixture out onto a baking sheet in a single layer and roast in the preheated oven for about 25-30 minutes, or until the squash is caramelized and tender.

While the butternut squash is roasting, assemble the rest of the salad. In a large bowl, combine the mixed greens, dried cranberries, feta cheese, and roasted pepitas.

Once the butternut squash is done roasting, let it cool slightly before adding it to the salad. Gently mix everything together, making sure to distribute the squash evenly throughout.
