Ingredients:

  • 150g oats
  • 100g whole wheat flour
  • 10g baking powder
  • 5g cinnamon
  • 2g salt
  • 120g unsweetened applesauce
  • 60ml maple syrup
  • 180ml milk
  • 1 egg
  • 5ml vanilla extract
  • 1 apple, diced

To start, preheat your oven to 375°F (190°C) and line a muffin tin with paper liners. In a mixing bowl, combine the oats, whole wheat flour, baking powder, cinnamon, and salt. In a separate bowl, whisk together the applesauce, maple syrup, milk, egg, and vanilla extract. Slowly pour the wet ingredients into the dry ingredients, stirring until just combined. Gently fold in the diced apple.

Divide the batter evenly among the muffin cups and bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
