The creamy risotto infused with warm curry flavors pairs beautifully with the sweet and earthy pumpkin, while the crispy pancetta adds a delightful crunch to every bite.

Ingredients:

  • Arborio rice (300g)
  • Pumpkin, diced (500g)
  • Onion, finely chopped (1)
  • Garlic, minced (2 cloves)
  • Curry powder (2 tsp)
  • Vegetable broth (1 L)
  • White wine (1/2 cup)
  • Parmesan cheese, grated (1/2 cup)
  • Pancetta, diced (100g)
  • Butter (2 tbsp)
  • Olive oil (2 tbsp)
  • Salt and pepper to taste

To start, heat the vegetable broth in a saucepan and keep it warm over low heat. In a separate skillet, cook the diced pancetta until crispy, then set it aside on a paper towel to drain. In the same skillet, heat olive oil over medium heat and sauté the onion and garlic until translucent. Add the Arborio rice and curry powder, stirring constantly until the rice is coated and slightly toasted.

Next, deglaze the skillet with white wine, stirring until the liquid is absorbed. Begin adding the warm vegetable broth, one ladle at a time, waiting for each addition to be absorbed before adding more. Stir continuously to develop the creamy texture of the risotto.

In another pan, sauté the diced pumpkin in butter until tender and slightly caramelized. Once the pumpkin is cooked, gently fold it into the risotto along with grated Parmesan cheese. Season with salt and pepper to taste.

To serve, ladle the curried pumpkin risotto into bowls and top with the crispy pancetta. The combination of creamy risotto, sweet pumpkin, and crispy pancetta creates a symphony of flavors and textures that will surely impress your taste buds.
