Spring has finally arrived, and what better way to celebrate this beautiful season than with a unique and delicious dessert? Today, I’m excited to share my recipe for a Floral Infusion Cheesecake that will surprise and delight your taste buds with its delicate flavors and creamy texture.

Ingredients:

  • cream cheese (250g)
  • sugar (150g)
  • eggs (3)
  • heavy cream (150ml)
  • butter (50g)
  • floral tea blend (2 tbsp)
  • vanilla extract (1 tsp)
  • lemon zest (from 1 lemon)
  • digestive biscuits (200g)

Kitchen Tools:

  • springform pan
  • food processor

To start, preheat your oven to 160°C (325°F) and prepare a springform pan by lining the bottom with parchment paper. Crush the digestive biscuits in a food processor until they resemble fine crumbs, then mix in melted butter until well combined. Press this mixture into the bottom of the pan to create the crust and set aside.

Next, heat the heavy cream in a saucepan until it just begins to simmer. Remove from heat and add the floral tea blend, allowing it to steep for 10 minutes. Strain the mixture, pressing down on the tea leaves to extract as much flavor as possible.

In a large mixing bowl, beat the cream cheese and sugar together until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the infused cream, vanilla extract, and lemon zest until fully incorporated.

Pour the cheesecake batter over the prepared crust in the springform pan. Smooth out the top with a spatula and bake in the preheated oven for 45-50 minutes, or until the center is set but slightly jiggly.

Once baked, let the cheesecake cool to room temperature before chilling in the refrigerator for at least 4 hours, or preferably overnight.
