Ingredients:

  • 4 salmon fillets (about 150g each)
  • 200g blackberries
  • 60ml balsamic vinegar
  • 30ml honey
  • 30ml olive oil
  • Salt, to taste
  • Black pepper, to taste

To start, preheat your oven to 180°C. Place the salmon fillets on a baking sheet lined with parchment paper. Season the fillets with salt and pepper, then bake them in the oven for 12-15 minutes, or until they are cooked through.

While the salmon is baking, it’s time to make the blackberry balsamic glaze. In a saucepan, combine the blackberries, balsamic vinegar, honey, and a pinch of salt. Cook over medium heat, stirring occasionally, until the blackberries have broken down and the mixture has thickened, about 10-12 minutes. Use a blender to puree the mixture until smooth, then strain it through a fine mesh sieve to remove any seeds.

Once the salmon is cooked, heat olive oil in a grill pan over medium-high heat. Place the salmon fillets skin side down on the pan and cook for 2-3 minutes, or until the skin is crispy. Brush the top of the fillets with the blackberry balsamic glaze, then flip them over and cook for another 2 minutes.

Serve the salmon hot, drizzled with the remaining blackberry balsamic glaze. The contrast of flavors between the savory salmon and the sweet-tangy glaze is truly delightful.
