Today, I’m sharing a delightful summer dish that is perfect for those hot days when you want something light, refreshing, and unexpectedly delicious. This watermelon and feta salad is a unique combination of sweet, juicy watermelon and salty feta cheese, with a touch of mint to brighten it all up. It’s a great accompaniment to any grilled meal or as a standalone snack.

Ingredients:

  • 1/2 medium watermelon, diced (about 500g)
  • 200g feta cheese, crumbled
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Pinch of salt
  • Pinch of black pepper

Start by dicing the watermelon into bite-sized pieces and placing them in a large mixing bowl. Add the crumbled feta cheese and chopped mint leaves to the bowl.

Gently toss everything together until the watermelon, feta, and mint are evenly coated in the dressing. Make sure not to crush the watermelon pieces as you mix.
