The Ultimate Vegetarian Lasagna Recipe

Today, I’m excited to share my favorite vegetarian lasagna recipe with you. This dish is perfect for cozy evenings at home or special occasions with friends and family. The rich layers of flavor and hearty textures are sure to satisfy even the pickiest eaters.

Ingredients:

  • 1 large eggplant, thinly sliced
  • 2 medium zucchinis, sliced into rounds
  • 250g mushrooms, sliced
  • 200g fresh spinach
  • 300g fresh mozzarella, thinly sliced
  • 200g lasagna sheets
  • 500ml homemade tomato sauce
  • 250g ricotta cheese
  • 100g grated parmesan cheese
  • Handful of fresh basil leaves
  • Salt and pepper to taste

To start, preheat your oven to 180°C. In a saucepan, heat the tomato sauce over medium heat until warm. In a separate pan, sauté the sliced mushrooms until golden brown. Season with salt and pepper to taste.

In a baking dish, spread a thin layer of tomato sauce on the bottom. Place a layer of lasagna sheets on top, followed by a layer of eggplant slices, zucchini rounds, and sautéed mushrooms. Add a layer of fresh spinach and dollops of ricotta cheese. Repeat this layering process until you reach the top of the dish.

Finish the lasagna with a final layer of lasagna sheets and pour the remaining tomato sauce over the top. Arrange the sliced mozzarella on top and sprinkle grated parmesan cheese over everything. Bake in the preheated oven for 40-45 minutes, or until the cheese is bubbly and golden brown.

Once the lasagna is cooked, remove it from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving.

This vegetarian lasagna recipe serves 6 people, with each serving weighing approximately 400g. One serving is approximately 450 calories.

A unique tip for this recipe is to add a layer of thinly sliced sweet potatoes between the eggplant and zucchini for a sweeter twist on this classic dish.
