Indulge in Creamy Pesto Pasta with Grilled Shrimp – A

Today’s Special: Creamy Pesto Pasta with Grilled Shrimp

Today, I’m excited to share a recipe that combines two of my favorite things: creamy pesto pasta and succulent grilled shrimp. This dish is perfect for a cozy dinner at home or a special gathering with friends. The creamy pesto sauce adds a rich flavor to the pasta, while the grilled shrimp brings a delicious smoky element to the dish. Let’s get cooking!

Ingredients:

  • linguine pasta (250g)
  • shrimp, peeled and deveined (300g)
  • pesto sauce (150g)
  • heavy cream (200ml)
  • garlic, minced (2 cloves)
  • parmesan cheese, grated (50g)
  • olive oil (2 tbsp)
  • salt and pepper to taste

Kitchen Tools:

  • large pot
  • grill pan
  • saucepan
  • wooden spoon

First, cook the linguine pasta in a large pot of salted boiling water according to the package instructions. While the pasta is cooking, heat a grill pan over medium heat. Toss the shrimp with olive oil, salt, and pepper, then grill them for 2-3 minutes on each side until they are pink and cooked through.

In a saucepan, heat some olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute. Pour in the heavy cream and pesto sauce, stirring until well combined. Bring the sauce to a simmer, then reduce the heat and let it cook for another 2-3 minutes.

Once the pasta is cooked, drain it and add it to the creamy pesto sauce. Toss the pasta until it is fully coated in the sauce. Sprinkle grated parmesan cheese over the top and mix well. Serve the creamy pesto pasta in bowls, topped with the grilled shrimp and an extra sprinkle of parmesan cheese.

This creamy pesto pasta with grilled shrimp weighs approximately 960g in total and serves 4 people. Each serving weighs around 240g and contains approximately 450 calories.

Tip:

For an extra burst of flavor, try adding a squeeze of fresh lemon juice to the dish before serving. The acidity of the lemon will help to brighten up the creamy pesto sauce and make the flavors pop!
