This Spicy Mango Chicken Stir-Fry combines the tropical flavors of ripe mangoes with the heat of chili peppers for a dish that will tantalize your taste buds. Let’s dive into this delicious culinary experience together!

Ingredients:

  • 400g chicken breast, thinly sliced
  • 1 large ripe mango, diced
  • 1 red bell pepper, sliced
  • 1 tbsp fresh ginger, minced
  • 2 cloves garlic, minced
  • 1 red chili pepper, thinly sliced
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • 2 green onions, chopped
  • Cooked rice, for serving

Kitchen Tools:

  • wok
  • chef’s knife
  • cutting board
  • measuring spoons
  • mixing bowl

To start, heat your wok over medium-high heat and add a splash of sesame oil. Stir-fry the chicken slices until they are cooked through, then remove them from the wok and set aside. In the same wok, add a bit more sesame oil and toss in the garlic, ginger, and red chili pepper. Stir-fry for a minute until fragrant.

Next, add the diced mango, sliced bell pepper, soy sauce, honey, and rice vinegar to the wok. Stir everything together and let it cook for a few minutes until the vegetables are slightly softened. In a small bowl, mix the cornstarch with a bit of water to make a slurry, then pour it into the wok to thicken the sauce.

Return the cooked chicken to the wok and toss everything together until the sauce coats all the ingredients beautifully. Sprinkle the chopped green onions on top for a burst of freshness and color. Serve your Spicy Mango Chicken Stir-Fry over a bed of steamed rice and enjoy!

Tip:

For an extra kick of heat, try adding a sprinkle of red pepper flakes or a drizzle of sriracha sauce to your stir-fry. Customize the spice level to your liking!
