  • boneless chicken thighs (250g)
  • 1 large sweet potato
  • 1 tablespoon honey
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste

Start by preheating your oven to 400°F. Peel and dice the sweet potato into small cubes. In a mixing bowl, combine the sweet potato cubes, honey, cumin, cinnamon, salt, and pepper, tossing everything together until the sweet potato is well coated with the seasonings.

Next, place the seasoned sweet potato cubes on a baking sheet in a single layer, making sure not to overcrowd them. Roast in the preheated oven for 20 minutes, or until the sweet potatoes are tender and slightly caramelized.

While the sweet potatoes are roasting, season the chicken thighs with salt and pepper. Heat a skillet over medium heat and cook the chicken thighs until they are cooked through and golden brown on the outside. Remove from the skillet and let them rest for a few minutes before slicing them into strips.

Once the sweet potatoes are done roasting, serve them on a plate and top with the sliced chicken thighs. Drizzle any remaining honey over the dish for an extra burst of sweetness.
