Today’s Special: Spicy Mango Chicken Curry

Hey there, foodies! Today, I’m excited to share with you a recipe that always brings warmth and comfort to my kitchen: Spicy Mango Chicken Curry. This dish is perfect for those days when you want something flavorful, exotic, and a little bit spicy. The combination of sweet mangoes, tender chicken, and aromatic spices creates a symphony of flavors that will tantalize your taste buds.

To recreate this delicious curry in your own kitchen, you’ll need the following ingredients:

  • 500g chicken breast, cubed
  • 2 ripe mangoes, peeled and diced
  • 1 large onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 1 green chili, sliced
  • 2 tbsp curry powder
  • 400ml coconut milk
  • 2 tbsp vegetable oil
  • to taste
  • fresh coriander leaves, for garnish

For this recipe, you will need the following kitchen tools:

  • sharp knife
  • cutting board
  • large pan
  • wooden spoon
  • measuring spoons

Start by heating the vegetable oil in a large pan over medium heat. Add the chopped onion and cook until softened. Then, add the minced garlic, grated ginger, and sliced green chili, and cook for a few more minutes until fragrant.

Next, add the cubed chicken breast to the pan and cook until browned on all sides. Sprinkle the curry powder over the chicken and stir well to coat. Let the spices toast for a minute before adding the diced mangoes and coconut milk.

Simmer the curry gently for about 20 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened slightly. Season with salt to taste.

Once the curry is ready, garnish with fresh coriander leaves and serve hot over steamed rice or with naan bread. The Spicy Mango Chicken Curry weighs approximately 1200g once cooked and serves 4. Each serving is around 300g and is estimated to be 400 calories.

A clever tip to make this dish even more flavorful is to add a splash of lime juice just before serving. The tangy citrus flavor will brighten up the rich and spicy curry, creating a perfect balance of tastes.

I hope you give this Spicy Mango Chicken Curry a try soon! Feel free to experiment with different proteins or add more veggies to make it your own. Enjoy!
