Mango Coconut Tiramisu

Today, I’m excited to share a unique twist on the classic tiramisu recipe. This Mango Coconut Tiramisu is perfect for summer with its tropical flavors and creamy texture. It’s a refreshing dessert that will surely wow your taste buds!

Ingredients:

  • Ladyfingers (150g)
  • Mascarpone cheese (250g)
  • Coconut milk (200ml)
  • Fresh mango (1, diced)
  • Sugar (100g)
  • Egg yolks (3)
  • Shredded coconut (50g)
  • Vanilla extract (1 tsp)

  • Whisk
  • Saucepan
  • Knife
  • Spatula

To start, combine the egg yolks and sugar in a heatproof mixing bowl. Whisk until light and fluffy. In a saucepan, heat the coconut milk until warm, then slowly pour it into the egg yolk mixture, whisking constantly. Return the mixture to the saucepan and cook over low heat until it thickens. Remove from heat and stir in the vanilla extract. Let it cool.

Next, fold in the mascarpone cheese until smooth and creamy. In a separate bowl, mix the diced mango with shredded coconut. Dip the ladyfingers in the mango juice (from dicing) and layer them in a serving dish. Spread a layer of the mascarpone mixture on top, followed by a layer of the mango coconut mixture. Repeat the layers until all ingredients are used, finishing with a layer of mascarpone on top.

Refrigerate the Mango Coconut Tiramisu for at least 4 hours to set. When ready to serve, garnish with extra shredded coconut and fresh mango slices. Enjoy the creamy, tropical goodness of this unique dessert!
