  • Wild boar sausage (150g)
  • Fiddlehead ferns (100g)
  • Black truffle oil (15ml)
  • Pink peppercorns
  • Honeycomb

Preparation

I start by preheating the oven to 400°F. I then wash and peel the purple sweet potatoes before dicing them into small cubes. Next, I heat a skillet over medium-high heat and cook the wild boar sausage until browned and cooked through. Once done, I remove the sausage from the skillet and slice it into rounds.

In the same skillet, I add the fiddlehead ferns and sauté them until they are tender. I then add the diced sweet potatoes and cook until they are soft and slightly crispy on the edges. To finish, I drizzle the dish with black truffle oil and sprinkle with pink peppercorns for an extra burst of flavor.

I transfer the mixture to a baking dish and bake in the preheated oven for 10-15 minutes to allow the flavors to meld together. Before serving, I top the dish with shaved honeycomb for a touch of sweetness and a beautiful presentation.
