  • 4 gelatin sheets
  • 100g honey
  • 1 tablespoon dried lavender

To start, pour the heavy cream and milk into a saucepan over medium heat. Add in the honey, dried lavender, and gelatin sheets (previously soaked in cold water) to infuse the flavors. Remove the saucepan from the heat and allow the mixture to steep for 10-15 minutes, letting the lavender essence fully blend in.

Next, strain the mixture through a fine mesh strainer into a heatproof bowl to remove the lavender and gelatin remnants. Divide the liquid evenly among ramekins or small dessert cups. Refrigerate for at least 4 hours, or until the panna cotta has set.

Once chilled and firm, remove the Honey Lavender Panna Cotta from the ramekins by dipping the bottoms briefly in hot water to loosen the edges. Invert onto serving plates and garnish with fresh lavender sprigs or a drizzle of additional honey for a touch of sweetness.
