This dish is a delightful combination of creamy ricotta cheese, zesty lemon, and flavorful broccoli pesto that will surely become a new favorite in your spring recipe rotation.

For this recipe, you will need the following ingredients:

  • 250g pasta
  • 200g broccoli florets
  • 150g ricotta cheese
  • 1 lemon (zested and juiced)
  • 50g pine nuts
  • 2 cloves of garlic
  • 60ml olive oil

To bring this dish to life, you will need the following kitchen tools:

  • saucepan
  • food processor
  • large pot
  • zester
  • juicer

Start by cooking the pasta according to the package instructions in a large pot of salted water. In the meantime, blanch the broccoli florets in the same pot for a few minutes until they are bright green and tender. Drain the pasta and broccoli, reserving a cup of pasta water.

Next, make the broccoli pesto by combining the blanched broccoli, pine nuts, garlic, lemon zest, lemon juice, olive oil, salt, and pepper in a food processor. Blend until smooth, adding pasta water as needed to reach your desired consistency.

In a separate bowl, mix the ricotta cheese with a bit of lemon zest, salt, and pepper to taste. Once the pasta and broccoli are cooked and drained, toss them together with the broccoli pesto until well coated. Serve the pasta topped with dollops of lemon ricotta and an extra sprinkle of lemon zest for brightness.
