Ingredients

– 200g ripe mango, thinly sliced
– 150g avocado, sliced
– 100g jicama, julienned
– 50g purple cabbage, shredded
– 50g carrot, julienned
– 8 rice paper wrappers
– Fresh mint leaves
– Fresh cilantro leaves

Preparation

Start by preparing all your ingredients and arranging them neatly on a clean work surface. Fill a shallow dish or bowl with warm water. Submerge one rice paper wrapper in the water for about 15-20 seconds until it becomes pliable. Place it on the damp towel.

Layer a few slices of mango, avocado, jicama, purple cabbage, and carrot in the center of the wrapper. Add a few mint and cilantro leaves on top. Fold the sides of the wrapper towards the center, then tightly roll everything up like a burrito.
