This unique combination of flavors is perfect for a spring or summer gathering, or simply for treating yourself to a delightful sweet treat.

Ingredients:

  • 120g butter
  • 200g digestive biscuits
  • 400g cream cheese
  • 150g sugar
  • 2 eggs
  • 2 lemons (zested and juiced)
  • 2 tablespoons culinary lavender

  • 8×8 inch baking pan
  • electric hand mixer

To begin, preheat your oven to 180°C. In a food processor, pulse the digestive biscuits until they resemble fine crumbs. Melt the butter and mix it into the biscuit crumbs until well combined. Press this mixture into the bottom of the baking pan to form the crust and bake it for 10 minutes until set.

In a mixing bowl, combine the cream cheese, sugar, eggs, lemon zest, lemon juice, and culinary lavender. Beat everything together with an electric hand mixer until smooth and creamy. Pour this mixture over the baked crust and spread it evenly.

Bake the cheesecake bars for 25-30 minutes, or until the edges are set but the center still has a slight jiggle. Allow the bars to cool to room temperature before chilling them in the refrigerator for at least 2 hours to set.

Before serving, slice the bars into squares and top each piece with a dollop of whipped cream for a light and airy finish. The floral notes of lavender combined with the zesty lemon create a truly unforgettable dessert experience.
