  • 1 lime, juiced
  • 2 tablespoons of fish sauce
  • 1 tablespoon of brown sugar
  • Salt, to taste
  • Fresh cilantro, for garnish

Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes until the pumpkin is tender.

Once the pumpkin is cooked, remove the lemongrass stalks from the soup. Using an immersion blender, blend the soup until smooth and creamy. If you prefer a chunkier soup, you can leave some pumpkin cubes intact. Squeeze in the lime juice and adjust the seasoning with more salt if needed.
