As the summer heat begins to settle in, I couldn’t resist sharing a refreshing and unique dessert recipe with all of you today. This Raspberry Basil Crème Brûlée combines the sweetness of ripe raspberries with the fresh, herbal notes of basil for a truly unforgettable treat.

Ingredients:

  • 200g fresh raspberries
  • 10g basil leaves
  • 300ml heavy cream
  • 6 egg yolks
  • 100g sugar

Kitchen Tools:

  • blowtorch

To start, preheat your oven to 325°F (160°C) and place your raspberries in a single layer on a baking tray. Roast them in the oven for 15 minutes until they release their juices and become slightly caramelized. Meanwhile, finely chop your basil leaves and set them aside.

In a saucepan, heat the heavy cream until just simmering, then add in the chopped basil leaves. Let the mixture steep for 10 minutes, then strain out the basil, pressing down to extract all the flavor. In a separate bowl, whisk together the egg yolks and sugar until pale and creamy.

Slowly pour the hot cream mixture into the egg yolks, whisking constantly to combine. Divide the roasted raspberries into the bottom of your ramekins, then pour the custard mixture over the top. Place the ramekins in a deep baking dish and fill with hot water halfway up the sides of the ramekins.

Bake in the preheated oven for 30-35 minutes, or until the custard is set but still slightly jiggly in the center. Remove from the oven and let cool to room temperature, then chill in the refrigerator for at least 2 hours to set.

Just before serving, sprinkle a thin layer of sugar over the tops of the custards and caramelize with a blowtorch until golden and crispy. Serve immediately and enjoy the delightful combination of flavors and textures in this Raspberry Basil Crème Brûlée.
