Ingredients:

  • 400 ml coconut milk
  • 100 g tapioca pearls
  • 2 ripe bananas
  • 50 g sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt

Preparation:

In a saucepan, bring the coconut milk to a gentle simmer over medium heat. Add in the tapioca pearls and cook for about 15-20 minutes, stirring occasionally, until the pearls are translucent and soft. Make sure to keep an eye on the pudding to prevent burning.
