For this unique dessert, you will need the following ingredients:

  • 100g dragonfruit puree
  • 50g black sesame seeds
  • 200ml coconut cream
  • 20g matcha powder
  • 50ml pandan syrup
  • 100g tapioca pearls

To bring this unique dessert to life, you will need the following kitchen tools:

  • mixing bowls
  • whisk
  • saucepan
  • strainer
  • ice cream maker

Start by preparing the tapioca pearls according to the package instructions. Once cooked, rinse them under cold water and set aside. In a mixing bowl, combine the dragonfruit puree, coconut cream, pandan syrup, and matcha powder. Whisk until well combined and smooth.

Next, toast the black sesame seeds in a dry saucepan over low heat until fragrant. Add the toasted sesame seeds to the mixture and stir to incorporate. Fold in the cooked tapioca pearls gently.

Transfer the mixture to an ice cream maker and churn according to the manufacturer’s instructions until you achieve a creamy, frozen consistency. If you don’t have an ice cream maker, you can place the mixture in a shallow dish in the freezer and stir every 30 minutes until frozen.

Once the dessert has reached the desired texture, scoop it into bowls and garnish with extra black sesame seeds and a drizzle of pandan syrup. The combination of flavors and textures in this unique dessert is sure to leave you wanting more.
