Ingredients:

  • 200g green lentils
  • 1 large onion, diced
  • 2 carrots, diced
  • 2 stalks of celery, diced
  • 3 cloves of garlic, minced
  • 2 tbsp tomato paste
  • 500ml vegetable broth
  • 1kg potatoes, peeled and cubed
  • 200ml plant-based milk
  • 2 tbsp nutritional yeast
  • 2 tbsp olive oil

To start, preheat your oven to 200°C. In a saucepan, cook the lentils according to package instructions until tender. In another saucepan, heat olive oil over medium heat and sauté the onion, carrot, celery, and garlic until softened. Add tomato paste and cook for another minute.

Next, add the cooked lentils, vegetable broth, salt, and pepper to the vegetables. Simmer for 10-15 minutes until the mixture thickens slightly. Pour the lentil filling into an oven-safe dish and set aside.

Meanwhile, boil the potatoes in a large pot of salted water until tender. Drain the potatoes, then mash them in a mixing bowl with plant-based milk, nutritional yeast, salt, and pepper until smooth and creamy.

Spread the mashed potatoes evenly over the lentil filling in the dish. Use a fork to create a decorative pattern on the top if desired. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the filling is bubbly.

This Vegan Lentil Shepherd’s Pie weighs approximately 2150g, serves 6, with an average serving weight of 358g. Each serving is approximately 350 calories.
