  • lemongrass stalk, bruised
  • cashew nuts
  • kaffir lime leaves

  • garlic, minced
  • turmeric
  • cumin
  • coriander
  • fish sauce
  • vegetable oil

Start by heating vegetable oil in a large pot over medium heat. Add diced onion and minced garlic, and sauté until fragrant. Next, add diced pumpkin, red chili, cinnamon stick, and lemongrass stalk. Stir in turmeric, cumin, and coriander for a minute to toast the spices. Pour in coconut milk, brown sugar, fish sauce, and enough water to cover the pumpkin. Bring the curry to a gentle simmer and let it cook for 20-25 minutes, or until the pumpkin is tender.

In the meantime, toast cashew nuts in a separate pan until golden brown. Once the pumpkin is cooked, remove the lemongrass stalk and cinnamon stick. Stir in kaffir lime leaves, cloves, and the toasted cashew nuts. Adjust the seasoning to your taste with more sugar, fish sauce, or chili.

Serve the sweet and spicy pumpkin curry hot over steamed rice or with warm naan bread. The combination of creamy coconut milk, tender pumpkin, and a burst of flavors from the spices is a true culinary experience.
