Ingredients:

  • salmon fillets (4 fillets, 150g each)
  • blueberries (200g)
  • honey (50g)
  • balsamic vinegar (30ml)
  • garlic (2 cloves, minced)
  • fresh rosemary (1 sprig, chopped)
  • salt and pepper to taste

Kitchen Tools:

  • baking sheet
  • medium saucepan
  • mixing bowl
  • whisk
  • frying pan

To start, preheat your oven to 180°C. Place the salmon fillets on a baking sheet lined with parchment paper. In a mixing bowl, combine the honey, balsamic vinegar, garlic, rosemary, salt, and pepper. Pour this mixture over the salmon fillets, making sure they are well coated. Bake in the preheated oven for 15-20 minutes or until the salmon is cooked through and flaky.

While the salmon is cooking, prepare the blueberry compote. In a medium saucepan, combine the blueberries with a splash of water. Cook over medium heat until the blueberries start to break down and release their juices. Add a touch of honey to sweeten, along with a pinch of salt to balance the flavors. Let the compote simmer for 5-10 minutes until it thickens slightly.

In a separate frying pan, heat a bit of olive oil over medium-high heat. Sear the salmon fillets skin-side down until golden brown and crispy, about 2-3 minutes. Serve the salmon topped with the blueberry compote and garnish with fresh rosemary.
