Today, I’m excited to share with you a unique and flavorful dish that is perfect for cozy nights at home or intimate gatherings with loved ones. This dish was inspired by the changing seasons and my recent trip to a farmer’s market where I found the most beautiful purple potatoes. I knew I had to create a recipe that showcased their vibrant color and earthy flavor, and thus, my Purple Potato and Sage Galette was born.

Ingredients

  • 500g purple potatoes, thinly sliced
  • A handful of fresh sage leaves
  • 150g Gruyere cheese, grated
  • 150ml heavy cream
  • 2 tbsp olive oil
  • to taste

Preparation

Start by preheating your oven to 375°F (190°C) and lining a baking sheet with parchment paper. Roll out your pastry dough on a floured surface until it’s about 1/4 inch thick. Transfer the dough to the prepared baking sheet.

Next, arrange the thinly sliced purple potatoes on top of the pastry dough, overlapping slightly. Drizzle olive oil over the potatoes and season with salt and pepper. Scatter the fresh sage leaves over the potatoes and top with the grated Gruyere cheese. Fold the edges of the dough over the filling to create a rustic galette.

### Baking:
Brush the edges of the galette with a bit of olive oil to help them brown in the oven. Bake for 30-35 minutes, or until the potatoes are tender and the crust is golden brown. Remove from the oven and let cool slightly before serving.

Serving

This Purple Potato and Sage Galette serves 4-6 people, weighing approximately 1200g in total. Each serving is around 200g, with an estimated calorie count of 350 per portion. To add a little extra flair to this dish, drizzle a balsamic reduction over the top before serving for a sweet and tangy contrast to the savory potatoes and cheese.

Tips

For an even more decadent version of this galette, you can add crispy bacon pieces or caramelized onions to the filling before baking. The salty bite of the bacon or the sweet depth of the caramelized onions will take this dish to the next level, making it a standout at any dinner table.
