Whip Up a Flavorful Green Goddess Quinoa Salad!

Introducing: Green Goddess Quinoa Salad

I’m excited to share one of my favorite healthy recipes with you today — a vibrant and nutritious Green Goddess Quinoa Salad. This dish is perfect for a light and refreshing meal on a warm summer day, or as a colorful side dish for a family gathering. Packed with fresh vegetables, protein-rich quinoa, and a zesty herb dressing, this salad is sure to become a staple in your kitchen.

Ingredients:

  • quinoa (200g)
  • cucumber (1, diced)
  • bell pepper (1, diced)
  • cherry tomatoes (150g, halved)
  • avocado (1, diced)
  • spinach leaves (100g)
  • fresh basil leaves (15g, chopped)
  • pine nuts (50g, toasted)
  • olive oil (50ml)
  • lemon juice (1 lemon)
  • garlic clove (1, minced)
  • salt & pepper (to taste)

Kitchen Tools:

  • saucepan
  • mixing bowl
  • knife
  • cutting board
  • citrus juicer

To start, cook the quinoa according to the package instructions in a saucepan. Once cooked, let it cool to room temperature. In a large mixing bowl, combine the cooked quinoa, diced cucumber, bell pepper, cherry tomatoes, diced avocado, spinach leaves, and chopped basil.

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing. Pour the dressing over the salad and toss gently to combine. Taste and adjust seasoning as needed.

To finish, sprinkle the toasted pine nuts over the top of the salad for added crunch and nutty flavor. Serve the Green Goddess Quinoa Salad chilled, allowing the flavors to meld together.

The total weight of the cooked dish is approximately 900g, with about 4 servings. Each serving is around 225g, with an estimated calorie count of 300 per serving.

One unique tip for this recipe is to add a handful of fresh mint leaves to the salad for an extra burst of freshness and aroma. The mint pairs beautifully with the herb dressing and adds a new layer of flavor to the dish.
