Ingredients:

  • 2 medium sweet potatoes (about 500g)
  • 1 cup (125g) all-purpose flour
  • 1 large egg
  • 1 lemon, zested
  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts, toasted
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup olive oil
  • Salt and pepper, to taste
