Seasonal Fusion Recipe: Sweet Potato Gnocchi with Lemon-Basil Pesto

Today, I’m excited to share a dish that perfectly combines the earthy sweetness of sweet potatoes with the bright, herbaceous flavors of lemon and basil. This Sweet Potato Gnocchi with Lemon-Basil Pesto is a delightful fusion of seasonal ingredients that is sure to impress your taste buds.

Ingredients:

  • 2 medium sweet potatoes (about 500g)
  • 1 cup (125g) all-purpose flour
  • 1 large egg
  • 1 lemon, zested
  • 1 cup fresh basil leaves
  • 1/4 cup pine nuts, toasted
  • 1/4 cup grated Parmesan cheese
  • 1/3 cup olive oil
  • Salt and pepper, to taste

Kitchen Tools:

  • baking sheet
  • potato masher
  • food processor
  • fine mesh strainer
  • rolling pin

To start, preheat your oven to 400°F (200°C). Pierce the sweet potatoes with a fork and place them on a baking sheet. Roast for about 45-50 minutes until they are fork-tender. Let them cool slightly, then peel and mash them using a potato masher.

In a large bowl, combine the mashed sweet potatoes with the flour, egg, lemon zest, salt, and pepper. Mix until a dough forms. On a floured surface, roll the dough into long ropes, about 1 inch thick. Cut the ropes into bite-sized pieces to form the gnocchi.

Meanwhile, in a food processor, combine the fresh basil, toasted pine nuts, Parmesan cheese, olive oil, salt, and pepper. Blend until smooth to create the lemon-basil pesto.

Cook the gnocchi in boiling salted water until they float to the surface, then remove them with a slotted spoon. Toss the gnocchi in the lemon-basil pesto until evenly coated.

Serve the Sweet Potato Gnocchi with Lemon-Basil Pesto hot, garnished with extra Parmesan cheese and fresh basil leaves.

One unique tip for this dish is to lightly toast the pine nuts before adding them to the pesto. This will enhance their nutty flavor and add a lovely crunch to the sauce.

I hope you enjoy making and savoring this delicious seasonal fusion dish. Feel free to play around with the ingredients and make it your own!
