Refreshing Summer Melon Gazpacho

This melon gazpacho combines the sweetness of ripe melons with the tanginess of tomatoes and a hint of spice for a truly tantalizing flavor explosion.

Ingredients:

  • 1/2 small watermelon, diced
  • 1 small cantaloupe, diced
  • 4 medium tomatoes, chopped
  • 1 English cucumber, peeled and diced
  • 1 jalapeño, seeded and minced
  • 1/2 small red onion, finely chopped
  • 1/4 cup fresh lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper, to taste

Kitchen Tools:

  • large bowl

To start, combine the diced watermelon, cantaloupe, tomatoes, cucumber, jalapeño, red onion, lime juice, and cilantro in a large bowl. Season with salt and pepper to taste. Allow the mixture to sit for about 10 minutes to let the flavors meld together.

Next, working in batches, transfer the mixture to a blender and blend until smooth. If needed, add a little water to reach your desired consistency. Once blended, taste and adjust the seasoning as necessary.

Refrigerate the gazpacho for at least 1 hour to chill and allow the flavors to develop further. When ready to serve, give it a good stir and taste again for seasoning.

Serving:

This recipe makes about 6 servings, with each serving weighing approximately 300 grams. Each serving is around 100 calories, making this a light and healthy dish perfect for summer.

One clever tip for this gazpacho is to serve it in chilled bowls or glasses for an extra refreshing experience. You can also customize the garnishes by adding a drizzle of olive oil, a sprinkle of fresh herbs, or a dollop of Greek yogurt.
