Introducing: Creamy Mushroom and Spinach Stuffed Bell Peppers

Today, I’m excited to share a comforting and flavorful vegetarian recipe perfect for a cozy night in or a casual dinner with friends. This dish combines earthy mushrooms, tender spinach, and creamy cheese stuffed inside vibrant bell peppers. It’s a filling and delicious meal that’s sure to satisfy your taste buds.

For this recipe, you will need the following ingredients:

  • 4 large bell peppers
  • 200g mushrooms, finely chopped
  • 100g fresh spinach, chopped
  • 150g cream cheese
  • 50g grated cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

To prepare this dish, you will need the following kitchen tools:

  • knife
  • cutting board
  • skillet
  • baking dish
  • spoon

Start by preheating your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. Place the bell peppers in a baking dish and set aside.

In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant. Add the chopped mushrooms and cook until they are softened. Next, add the chopped spinach and cook until wilted. Season with salt and pepper to taste.

Remove the skillet from the heat and stir in the cream cheese until well combined. Spoon the mushroom and spinach mixture into each bell pepper until they are filled to the top. Sprinkle the grated cheese on top of each filled bell pepper.

Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes, or until the bell peppers are tender. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

The total weight of the cooked dish is approximately 1000g. This recipe serves 4 people, with each serving weighing around 250g. Each serving of this creamy mushroom and spinach stuffed bell peppers is approximately 300 calories.

One unique tip for this dish is to sprinkle some breadcrumbs on top of the cheese before baking for an added crunch and texture.

I encourage you to give this creamy mushroom and spinach stuffed bell peppers recipe a try and feel free to customize it with your favorite veggies or herbs. Enjoy!
