The earthy flavors of mushrooms combined with the luxurious essence of truffle make this dish a true standout.

For this recipe, you will need the following ingredients:

  • 200g arborio rice
  • 250g mixed mushrooms (such as shiitake, cremini, and portobello)
  • 1 shallot
  • 2 cloves of garlic
  • 100ml white wine
  • 1L vegetable broth
  • 50g parmesan cheese
  • 1 tbsp truffle oil
  • 2 tbsp butter
  • Salt and pepper to taste

To bring this dish to life, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • wooden spoon
  • saucepan
  • grater

Begin by finely chopping the shallot and garlic. Heat up the vegetable broth in a saucepan and keep it simmering on low heat. In another saucepan, melt the butter over medium heat and sauté the shallot and garlic until fragrant. Add the arborio rice to the pan and toast it for a couple of minutes until translucent.

Deglaze the rice with white wine, stirring continuously until the wine is absorbed. Begin adding the warm vegetable broth one ladle at a time, allowing the rice to absorb the liquid before adding more. This process should take about 18-20 minutes, and the rice should be creamy and slightly al dente.

In a separate pan, sauté the mixed mushrooms until golden brown and season with salt and pepper. Once the risotto reaches the desired consistency, stir in the sautéed mushrooms, parmesan cheese, and truffle oil. Adjust the seasoning with salt and pepper to taste.

Serve the Creamy Mushroom and Truffle Risotto hot, garnished with additional parmesan cheese and a drizzle of truffle oil. This indulgent dish weighs approximately 1100g when cooked and serves 4 people, with each serving weighing around 275g. Each serving is estimated to be around 400 calories.

One tip to enhance the flavors of this risotto is to infuse the vegetable broth with dried porcini mushrooms for added depth. Simply add a handful of dried porcini mushrooms to the broth as it simmers, then strain before using in the risotto.
