  • 1 large ripe mango (peeled and diced)
  • 400ml coconut milk
  • 300g chicken breast (cut into strips)
  • 2 tbsp red curry paste
  • 1 tbsp sugar
  • 2 tbsp fish sauce
  • Handful of fresh basil leaves
  • Cooked jasmine rice, for serving

Once the chicken is cooked, add the diced mango to the skillet and stir gently to combine. Let it simmer for an additional 5 minutes to allow the flavors to meld together.

Before serving, tear the fresh basil leaves and sprinkle them over the curry. Serve the mango coconut curry over cooked jasmine rice for a complete and satisfying meal.
