Today, I’m sharing a unique dish that’s perfect for those looking for a flavorful and surprising meal. This recipe combines unusual ingredients to create a dish that is both delicious and satisfying.

Ingredients

– 300g purple sweet potatoes
– 200g black beans
– 1 red bell pepper
– 1 avocado
– 100g feta cheese
– A handful of cilantro
– 2 tbsp balsamic vinegar
– 1 tbsp olive oil
– Salt and pepper to taste

Preparation

Start by preheating your oven to 400°F (200°C). Wash and scrub the purple sweet potatoes and prick them with a fork. Place them on a baking sheet and bake in the oven for about 45-50 minutes until they are tender.

While the sweet potatoes are baking, rinse the black beans in a colander and chop the red bell pepper, avocado, feta cheese, and cilantro. In a small bowl, whisk together the balsamic vinegar, olive oil, salt, and pepper to make the dressing.

Once the sweet potatoes are cooked, let them cool slightly before slicing them in half. Gently scoop out some of the flesh from the center to create a well for the filling.

In a large bowl, mix together the black beans, red bell pepper, avocado, feta cheese, cilantro, and dressing. Season with salt and pepper to taste. Spoon the mixture into the sweet potato halves and place them back in the oven for another 10 minutes to heat through.
