For this recipe, you will need the following ingredients:

  • 200g firm tofu, diced
  • 1 large ripe mango, peeled and cubed
  • 1 red bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves of garlic, minced
  • 1-2 red chili peppers, thinly sliced
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 1 tbsp rice vinegar
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1/4 cup water

To start, heat 1 tbsp of vegetable oil in a wok over medium-high heat. Add the diced tofu and fry until golden brown and crisp on all sides. Remove the tofu from the wok and set it aside.

In the same wok, add the remaining vegetable oil and sauté the garlic, onion, and red bell pepper until fragrant and slightly softened. Add the sliced chili peppers and mango cubes, stirring gently to combine.

In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, brown sugar, cornstarch, water, salt, and pepper. Pour this sauce over the mango and vegetable mixture, stirring until the sauce thickens and coats the ingredients evenly.

Return the fried tofu to the wok and toss everything together until well combined. Cook for another 2-3 minutes to allow the flavors to meld together.

Once everything is heated through, remove the wok from the heat and serve the exotic mango chili tofu stir-fry hot over steamed rice or noodles.
