Today’s Unique Dish: Pistachio-Crusted Salmon with Raspberry Glaze

Hello, lovely foodies! Today I am excited to share a special dish that combines sweet and savory flavors in a delightful way. I created this recipe to celebrate the vibrant colors and tastes of spring. The combination of pistachios, salmon, and raspberry glaze is truly unique and will leave your taste buds craving for more.

Preparation

To make this exotic dish, you’ll need the following ingredients:

  • 2 salmon fillets, skin on
  • 50g unsalted pistachios, finely chopped
  • 100g fresh raspberries
  • 30ml honey
  • 50g spinach leaves
  • olive oil
  • salt and pepper

Grab these essential tools from your kitchen:

  • baking sheet
  • food processor
  • frying pan
  • saucepan

Start by preheating your oven to 200°C. Place the salmon fillets skin side down on a baking sheet lined with parchment paper. Season them with salt and pepper.

In a food processor, pulse the pistachios until they are finely ground. Press the ground pistachios onto the top of each salmon fillet to create a crispy crust. Drizzle a little olive oil over the pistachio crust.

Bake the salmon in the preheated oven for about 12-15 minutes, or until the fish is cooked through and the pistachios are golden brown and crunchy.

Raspberry Glaze

While the salmon is baking, prepare the raspberry glaze. In a saucepan, heat the fresh raspberries and honey over medium heat. Stir continuously until the raspberries break down and the mixture thickens into a glossy glaze. Remove from heat and set aside.

Serving

In a clean frying pan, quickly sauté the spinach leaves with a touch of olive oil until wilted. Divide the spinach between two plates.

Once the salmon is cooked, carefully transfer it on top of the sautéed spinach. Drizzle the raspberry glaze over the salmon fillets.

Serve your pistachio crusted salmon with raspberry glaze hot, and enjoy the explosion of flavors with each bite!

Tips and Tricks

For an extra special touch, you can sprinkle some additional chopped pistachios on top of the glazed salmon before serving. This will add an extra crunch and enhance the pistachio flavor in the dish.
