– 1 teaspoon of turmeric
– 1 teaspoon of cumin
– Salt and pepper to taste
– Fresh cilantro for garnish

To prepare this dish, you will need the following kitchen tools:

  • chef’s knife
  • cutting board
  • medium pot
  • wooden spoon
  • baking sheet

Start by preheating your oven to 400°F (200°C). Peel and cube the purple sweet potatoes, then spread them out on a baking sheet. Drizzle with olive oil, sprinkle with turmeric, cumin, salt, and pepper, and toss to coat. Roast in the oven for 25-30 minutes until tender and slightly crispy.

While the sweet potatoes are roasting, rinse the quinoa under cold water and cook according to the package instructions in a medium pot. In a separate saucepan, heat the coconut milk over medium heat. Whisk in the miso paste, maple syrup, and a pinch of salt until well combined.

Slice the shiitake mushrooms and add them to the coconut milk mixture. Let it simmer for 5-7 minutes until the mushrooms are tender. Taste and adjust the seasoning as needed.

Once the sweet potatoes are done roasting, add them to the pot with the quinoa and stir to combine. Serve the creamy coconut mushroom mixture over the sweet potato quinoa mixture. Garnish with fresh cilantro and enjoy!
