This dish was inspired by a recent trip to the farmer’s market where I found perfectly ripe plums and fresh pistachios that just begged to be paired with savory chicken. The result is a delicious and unexpected combination of flavors that will surely wow your taste buds.

Ingredients

– 4 boneless, skinless chicken breasts (600g)
– 4 ripe plums, pitted and sliced (300g)
– 1 cup shelled pistachios, chopped (150g)
– 1/4 cup fresh mint leaves, chopped (10g)
– 2 cloves garlic, minced
– 2 tablespoons olive oil
– Salt and pepper to taste

Preparation

Start by preheating your oven to 375°F (190°C). Place the chicken breasts in a baking dish and season with salt and pepper. In a food processor, combine the pistachios, mint, garlic, olive oil, and a pinch of salt. Pulse until you have a coarse mixture.

Spread the pistachio herb crust evenly over the chicken breasts, pressing gently to adhere. Arrange the plum slices on top of the crust. Drizzle with a little more olive oil.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown. Serve hot and enjoy the unique combination of flavors in this dish.
