Today, I’m excited to share my latest creation: Roasted Plum Chicken with Pistachio Herb Crust. This dish was inspired by a recent trip to the farmer’s market where I found perfectly ripe plums and fresh pistachios that just begged to be paired with savory chicken. The result is a delicious and unexpected combination of flavors that will surely wow your taste buds.

Ingredients

– 4 boneless, skinless chicken breasts (600g)
– 4 ripe plums, pitted and sliced (300g)
– 1 cup shelled pistachios, chopped (150g)
– 1/4 cup fresh mint leaves, chopped (10g)
– 2 cloves garlic, minced
– 2 tablespoons olive oil
– Salt and pepper to taste

Preparation

Start by preheating your oven to 375°F (190°C). Place the chicken breasts in a baking dish and season with salt and pepper. In a food processor, combine the pistachios, mint, garlic, olive oil, and a pinch of salt. Pulse until you have a coarse mixture.

Spread the pistachio herb crust evenly over the chicken breasts, pressing gently to adhere. Arrange the plum slices on top of the crust. Drizzle with a little more olive oil.

Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the crust is golden brown. Serve hot and enjoy the unique combination of flavors in this dish.

Tips

For an extra burst of flavor, try drizzling a bit of balsamic reduction over the finished dish before serving. The sweetness of the reduction pairs perfectly with the tangy plums and savory chicken.
