That’s why I’m excited to share my recipe for Spicy Mango Coconut Curry with you today. This dish is a delightful fusion of sweet mango, creamy coconut milk, and spicy curry flavors that will transport your taste buds to a far-off paradise.

Ingredients:

  • 1 ripe mango, peeled and diced
  • 400ml coconut milk
  • 2 tbsp red curry paste
  • 1 red bell pepper, sliced
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1-inch piece of ginger, grated
  • 2 chicken breasts, thinly sliced
  • 1 tbsp fish sauce
  • 1 tbsp brown sugar
  • Handful of fresh basil leaves, torn

To start, heat a skillet over medium heat and add the red curry paste. Cook for a minute until fragrant, then add the sliced chicken breasts and cook until browned on all sides. Remove the chicken from the skillet and set aside.

In the same skillet, add the onion, garlic, and ginger. Sauté until the onion is translucent, then add the diced mango and red bell pepper. Cook for a few minutes until the vegetables start to soften.

Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine, then bring the mixture to a simmer. Add the cooked chicken back to the skillet and let everything simmer together for about 10 minutes, allowing the flavors to meld.

Finally, stir in the torn basil leaves and adjust the seasoning with salt and pepper if needed. Serve the spicy mango coconut curry over steamed rice and enjoy the burst of tropical flavors in every bite.
