  • 300ml heavy cream
  • 200ml whole milk
  • 100g sugar
  • 1/2 tsp saffron threads
  • 4-5 cardamom pods, crushed
  • 2 1/2 tsp gelatin
  • 50g pistachios, chopped

To prepare this exotic dessert, start by warming the heavy cream and milk in a saucepan over medium heat. Add in the sugar, saffron threads, and crushed cardamom pods, stirring gently to dissolve the sugar and infuse the flavors.

In a separate bowl, sprinkle the gelatin over a couple of tablespoons of cold water to bloom. Once the gelatin has softened, add it to the warm cream mixture, stirring until fully dissolved.

Strain the mixture to remove the cardamom pods and any large saffron threads, then pour the liquid into ramekins. Allow the panna cotta to cool to room temperature before transferring to the refrigerator to set for at least 4 hours, or ideally overnight.

Before serving, toast the chopped pistachios in a dry skillet until fragrant and lightly golden. Sprinkle the toasted pistachios over the chilled panna cotta for a delightful crunch and nutty flavor contrast.
